Use small fillets (about a 16" fish)
Salt & pepper the filets, drizzle with lemon juice.
Make a stuffing of breadcrumbs, parsley, dill, celery,
butter, and cheese cubes.
Place about a tablespoon of the mixture on the fillet and roll it up.
Secure with a toothpick if necessary.
Butter a baking dish and place roll-ups in a single layer in the pan.
Top with buttered breadcrumbs and drizzle with butter again.
Bake at 450 for 10 minutes.
Pour about 1/2 cup of milk over the roll-ups for a pie
pan size batch
(about 1 cup of milk for a 9X13 pan) and bake for another 5 minutes.
If using larger fillets, increase baking time by about
3 to 4 minutes.
